40% Chardonnay, 40% Pinot Noir, 20% Pinoit Meunier
This 1er Cru champagne contains grapes from the various plots of the village of Trois-Puits. Thus, Périne Baillette gives a taste of her home village while demonstrating her outstanding blending skills. The young wines are vinified in enameled tanks and a small proportion in oak barrels. To bring more depth and complexity to this cuvée, it dazzles this champagne with 30% reserve wines from the previous two years. The Le Village Champagnes are chilled for the wine claret, but not filtered. In order to create a more balanced acidity, Périne Baillette allows malolactic fermentation as needed. Ripening time: 36 months.
