Tasting Note:
The first nose aromas are ripe fruits, pickled cherries, Plum, BlackBerry and then close with hints of sweet licorice, leather and Earth. Light tannins In the mouth perfectly supported by a precious mineral. A structured wine but balanced, it combines with well-seasoned dishes and red meat and game. Paiagallo 2014 shows a lot of complexity for such a young wine - at first very savory and ripe, then lovely bright cherry fruit on the palate and finish.
Vinification:
Giovanni Canonica is a hidden legend in the town of Barolo. He has only 1.5 hectares of vines in the Paiagallo and produces 6,000 bottles of great wine using Biodynamic Viticulture.
