Les Caillottes” take their name from the very fine soil composed of stones, flint and limestone pebbles sheltering the young Sauvignon Blanc vines. The harvests are very often late, not with the aim of adding residual sugar to the wines but just to bring a certain softness, a tender side which results in more smoothness in the mouth. Aging for about 8 months in 600-litre casks aged 6 to 8 years produces delicate and tonic juices, sincere reflections of the uniqueness of their terroir. Here is a Sancerre as we like them, frank, direct and ultra sapid. It is its mineral character, an explosive expression straight from caillotte soils. The second nose reveals floral fragrances and citrus freshness. On the palate, this wine is animated by a pure and crystalline half-body. The salivating finish lingers on a welcome saline note
