Tasting Note:
Fermentation and maceration in stainless steel tanks for 22-25 days at a controlled temperature. Malolactic fermentation and aging in used barrique for 14-18 months, and then in bottle for few months before release. Elegant and slightly spicy and waxy notes of ripe plums and cherries. The nose is a glorious explosion of dried flowers and herbs. Pair to braised gamey meats or a decadent cheese and charcuterie spread.
Vinification:
In 2009, Guido Rivella, the oenologist of Gaja for the last 40 years started to produce his own wine and the wine is wondeful. 12,500 bottles were produced annually from his own 3.5 hectares using Organic Viticulture.
