Hand picked and direct pressing. Half of the wine is fermented in 350 liter cherry barrels and half in 54 liter “dame-jeannes”. Blending and maturing in dame-jeannes for 10 months. Dry and floral notes of pear, tense, mineral with great potential for aging. Bottled by gravity, without filtration. 630 bottles produced

Chateau Ormiale comprises of 2 hectares and produces less than 10,000 bottles annually using Biodynamic Viticulture. This cuvee only produced bottles in 2018
