Gérard Boulay operates 11.5 hectares of vines, including 9.5 in Sauvignon in Chavignol. Fifteen years ago, he opted for a viticulture that respects the land and the plant since he works the soil to promote organic life and uses products from organic farming to fight against diseases. Same terroir as the Grande Côte. Coming from “white lands”, these terroirs of Chavignol give pride of place to Kimmeridgian marls, identical to the soils of Chablis. These are wines with texture, each reflecting their terroir of Montsdamnés, Beaujeu, La-Côte or La-Countess, the estate produces mainly whites, the 2 hectares of reds being almost exclusively dedicated to rosé sold for export.
Vinification:
Gerard Boulay is one of the greats of this tiny village and produces some of the most distinctive and sublime wines in Sancerre. He produces 60,000 bottles of fine wine from 11 hectares with Organic Viticulture.
