Tasting Note:
It comes from Nebbiolo grapes grown in the Municipality of Barbaresco, in the Rio Sordo valley, from vineyards facing south-west. In the vineyard the maximum respect for the environment is in force. After the harvest, the first week of October, the pomace remains in contact with the must for 3 weeks, kept in immersion by means of comebacks throughout the alcoholic fermentation period. Subsequently the malolactic fermentation takes place in the cellar at a temperature of 20 ° C in traditional Slavonian oak barrels of 10-17 hl for 22 months. Filtration and clarification are not provided. Bright and transparent garnet red. It enjoys extreme finesse and cleanliness to the nose: clean and clear dark fruits, sweet spices, Mediterranean scrub and much undergrowth. The Family owns 4 hectares and produces 24,000 bottles of fine wine using Indigenous yeast and biodynamic Viticulture.
