Fabio: "The sugar is so you can drink this in the morning and fight a shark." The number of the bottle and the total number of bottles are hand written on labels made from handmade paper. There is an elaborate code on each label that we break down in Fabio's producer profile. The grapes are destemmed and given a four to twelve hour maceration. Fermentation and aging are in demijohn and homemade porcelain jars for three months. Intentionally bottled with residual sugar.
