Tasting Note:
A blend of mostly Macabeo (80%), Xarello (10%) and Garnacha Blanca (10%), all organically grown in the Baix Penedès. Hand harvested, each varietal separately, goes through spontaneous fermentation with native yeasts in stainless steel tanks and 300 L neutral casks. The wine is then blended and goes through 8 months in 300 L neutral barrels, plus 1 month in a Stainless Steel tank. Bottled unfined, unfiltered, and low to no SO2.
